Old Fashioned Sausage and Pepper Supper

This meal is something our moms cooked frequently. A down-home kind of supper that sticks with you. I've updated it to accommodate our dietary restrictions.


Old Fashioned Sausage & Pepper Supper


Ingredients:

1 lb. chicken sausage (mild or spicy)

8 oz package mushrooms, sliced

1 medium to large onion, sliced

3 medium size peppers (red, orange, or yellow)

2 cloves garlic, sliced

½ teaspoon oregano

½ teaspoon parsley

1 sprig rosemary

¾ teaspoon fresh ground pepper

1 cup red wine

¼ cup olive oil

4 Tablespoons all-purpose flour


Directions:

1. Add olive oil, garlic, oregano, parsley, rosemary, and pepper to a deep skillet. Saute for 1 to 2 minutes.

2. Add mushrooms, peppers, and onion. Saute for about 5 minutes until onions and peppers soften.

3. Add sausage to skillet. Mix.

4. Add wine.

5. Simmer for about 40 minutes on low heat, stirring occasionally.

6. Add flour, mix well. Simmer 7-10 minutes more.


Serve hot on bread of your choice. We’ve used hoagie rolls, mini-subs, sandwich rolls, Italian bread.

Optional: top with shredded parmesan cheese if desired.
