Bracciole - An Italian Steak Dish

If you're of a certain age, you may have trouble biting into and chewing a steak. But this recipe is guaranteed to melt in your mouth.
Most often served with spaghetti or pasta because it is cooked in the sauce, this is one dish that your family and friends will ask for again and again.
Ingredients
1 1/4 pounds of Eye Round Steak - Thin Cut
Garlic, minced - to taste
1/2 teaspoon each:
Dried Oregano, Dried Parsley; Black Pepper (more or less according to your taste)
Several long wooden skewers or toothpicks
1 to 2 Tablespoons of Olive Oil
Directions
Lay meat flat on a cutting board or other solid surface.
Using a wooden kitchen mallet, pound the meat until all pieces are the same thickness.
In a small bowl, combine the garlic, oregano, parsley, and black pepper.
Spread the garlic mix one one side of each piece of pounded meat
Roll up each piece of meat and insert toothpicks/skewer to hold closed
In a hot frying pan, brown each roll of meat in the olive oil. Make sure to sear the meat on all sides.
Transfer the fried steak rolls to a pot of tomato sauce
Allow the meat to simmer slowly in the sauce until done (maximum of 2 hours).
Serve the bracciole with the sauce over spaghetti, linguine, or pasta.
Recipe will make enough for four (4) servings - each serving consisting of two (2) bracciole.
NOTE: This is a recipe that my mother made frequently. It's a nice treat for a holiday or any day that you want to feel special. Buon appetito!
