Zucchini Fritters - Greek Style

Both my wife Marion and I really like this recipe. It is easy to make and truly delicious. We've enjoyed these a couple of times already. My recipe is adapted from the original Pampered Chef recipe for Greek Zucchini Fritters. I hope you enjoy it and it becomes one of your favorites.
Zucchini Fritters – Greek Style
Yogurt Sauce:
½ cup non-fat plain Greek yogurt
2 Tablespoons lemon juice
1 Tablespoon chopped dill (1 teaspoon if using dried)
1 garlic clove, pressed
Fritters
2 cups packed, grated zucchini (about 1 large zucchini)
2 large eggs, lightly beaten
3 green onions, thinly sliced
½ cup crumbled feta cheese (I used the non-fat kind)
½ cup all-purpose flour
½ teaspoon ground nutmeg
2 cloves garlic, chopped fin
¼ cup olive oil
Directions
1. For the sauce, combine all the ingredients in a small bowl. Cover and refrigerate.
2. For the fritters, combine all the ingredients except the oil in a bowl. Batter will be wet when combined.
3. In a non-stick skillet, heat about 2 Tablespoons of the olive oil.
4. Spoon batter into the skillet, ¼ cup at a time.
5. Fry until bottom of fritters are golden brown, then flip using a spatula.
6. Remove from skillet when second side is golden.
7. Add small amount of additional olive oil as needed to skillet.
8. When fitters are done, remove them to a serving platter.
9. Serve with the yogurt sauce. For a richer accompaniment, you can use sour cream with a sprinkle of dill.
NOTES: These fritters are an excellent side dish. They can even be used as a main dish for a light meal. Left overs can be served at room temperature for a nutritious breakfast.
If you prefer not to fry the fritters, you can cook them on a hot griddle, being sure to flatten them with the back of a spoon or spatula. They will need to cook about 3-4 minutes per side.
