What's a Dance That You Can Eat?

How's that? Can food dance? It certainly can if it's spicy, hearty, and oh so good! And if it's made with salsa. Get it? Salsa is a dance and it's also a terrific accompaniment to your meal.
We recently purchased a Quick Cooker from Pampered Chef (love their products). This gem is a combination pressure cooker/steamer/slow cooker and more. And it's easy to use. This recipe was created for use with this compact cooker but you can make it using items you have at home. However, the Quick Cooker cuts the prep time down to around 30 minutes.

FIERY SALSA CHICKEN
(adapted from a Pampered Chef recipe)
Ingredients
2 1/2 to 3 lbs of skinless boneless chicken breast
1/8 teaspoon paprika
1/8 teaspoon freshly ground black pepper
1/8 teaspoon dried cilantro
1 1/2 cups of your favorite salsa
about 8 flour tortillas
Toppings: sour cream, shredded parmesan cheese, chopped green onions
Directions:
If using the Quick Cooker, follow directions in the Quick Start Guide that came with your machine.
If using a slow cooker or crock pot:
In a small bowl, combine the paprika, black pepper, and dried cilantro.
Coat chicken with seasonings.
Place chicken into slow cooker.
Pour salsa over chicken being sure to cover the chicken.
Set your cooker on the LOW setting for about 4-6 hours.
When done, serve with tortillas and assorted toppings.
Serves: 4 people Prep time: 15 minutes
NOTES:
I used about 2 1/2 lbs of chicken for this recipe.
For salsa, I used Newman's Own Mango Salsa (lowest in salt content we could find and it gives a nice mildly spicy taste.
For added heat (Chef Don's way of eating), I simply added a splash of tabasco sauce to my filled tortilla.
Instead of flat tortillas, I prefer the El Paso Soft Tortilla Bowls. They are easier to handle.

The leftovers will keep nicely in the refrigerator for a couple of days and are just as delicious.
Definitely a recipe I'll make again.
