Spaghetti with Clams

I love spaghetti with clams. My preference is for angel hair pasta but regular pasta is the usual choice.


Spaghetti With Clams


Ingredients:

1 lb spaghetti (regular or angel hair works best)

1 lb Littleneck Clams (raw, in the shell), cleaned

2 cloves garlic, smashed

½ cup olive oil

Fresh ground black pepper

¼ teaspoon parsley (dried)

4 to 6 ounces of bottled of clam juice


Directions:

  • Cook spaghetti in the usual manner. Drain and set aside.

  • In another pot, steam the clams until they open – discard any that do not open. Drain the clams and set aside.

  • Using the same pot you steamed the clams in, add the olive oil, garlic, pepper, and clam juice. Saute the garlic until transparent.

  • Add the clams back to the pot and stir.

  • Add the spaghetti to the clam mixture. Stir to coat the spaghetti with the clam mixture.

  • Serve in a large bowl.


Notes:

Mussels may be used instead of clams, just be sure to clean and de-beard the mussels before cooking.

If you prefer a 'kick' to your seafood, sprinkle with red pepper flakes.
