I love spaghetti with clams. My preference is for angel hair pasta but regular pasta is the usual choice.
Spaghetti With Clams
Ingredients:
1 lb spaghetti (regular or angel hair works best)
1 lb Littleneck Clams (raw, in the shell), cleaned
2 cloves garlic, smashed
½ cup olive oil
Fresh ground black pepper
¼ teaspoon parsley (dried)
4 to 6 ounces of bottled of clam juice
Directions:
Cook spaghetti in the usual manner. Drain and set aside.
In another pot, steam the clams until they open – discard any that do not open. Drain the clams and set aside.
Using the same pot you steamed the clams in, add the olive oil, garlic, pepper, and clam juice. Saute the garlic until transparent.
Add the clams back to the pot and stir.
Add the spaghetti to the clam mixture. Stir to coat the spaghetti with the clam mixture.
Serve in a large bowl.
Notes:
Mussels may be used instead of clams, just be sure to clean and de-beard the mussels before cooking.
If you prefer a 'kick' to your seafood, sprinkle with red pepper flakes.
