Parslied Mushroom Patties

These wonderful patties are a staple in our house. My wife has been making these for over 35 years and they are a nice treat from the heaviness of meat. Eat them the same way you would any beefburger - on a roll with tomato slice and onion slice is great! Or even as a snack late in the afternoon. These beauties make a wholesome yet light lunch when accompanied by a salad or other vegetable.
Parslied Mushroom Patties
3 slightly beaten eggs
3 cups coarsely chopped fresh mushroom (I ounces)
½ cup all purpose flour
½ cup fine dry bread crumbs (I use unseasoned or plain bread crumbs)
1/3 cup finely chopped onion
1 tablespoon parsley flakes
¼ teaspoon pepper
3 tablespoons cooking oil
In a large mixing bowl combine eggs, mushrooms, flour, bread crumbs, onion, parsley, and pepper. Mix well.
In a 10-inch skillet heat oil over medium-high heat.
Using 1/3 cup mixture for each patty, shape mixture into 3 ½ inch patties.
Using a spatula, place 4 patties at a time into hot oil in skillet. Cook 3-4 minutes per side until brown. Remove from skillet; drain on paper towels if needed. Cook and drain remaining patties.
Makes approximately 8 mushroom patties.
