Found a dozen or so different recipes for a Chinese favorite: General Tso's Chicken. Took the best parts of those recipes and came up with Chef Don's Crockpot Chinese Chicken. We made it on the mild side but of course I added hot sauce to mine for that extra zing.
Chef Don's Crockpot Chinese Chicken
Ingredients:
2 chicken breasts cut into bite-sized chunks 2 tablespoons cornstarch (I used unbleached flour) 2 teaspoon olive oil 1/2 teaspoon fresh cracked pepper 1/4 cup hoisin sauce (I used Worcestershire) 2 tablespoons honey 2 tablespoons apple cider vinegar 3 garlic cloves finely minced 1 1-inch piece ginger finely minced (I left this out due to dietary restrictions) a pinch of red pepper flakes green onions for garnish
Instructions:
1. Add the chicken breast chunks, flour, and fresh cracked pepper to a plastic bag. Shake the bag until the chicken is coated in the flour. 2. Heat the oil in a large pan over high heat. Add the chicken (I also added 1/2 cup of dry white wine) and sear until chicken is browned on all sides (about 10 minutes).. 3. Add the chicken and all the remaining ingredients to your crockpot and stir. Set the crockpot on high for 4 hours. Check halfway through and adjust crockpot setting as necessary. 4. Serve the cooked chicken with a side of rice, some steamed veggies and a sprinkle of green onions on top.

Tried the same recipe with pork. Came out very good. I think I like the pork better but Marion prefers the chicken. So we'll be adding both versions to our recipe box.
