Baked Divers Scallops

This easy to prepare recipe for baked scallops was quick to prepare and a nice addition to our seafood menu. I


BAKED DIVERS SCALLOPS


½ lb jumbo deep sea scallops

1/3 cup fresh butter

½ clove minced garlic

1 Tbsp white wine (optional)

1/3 cup fine plain breadcrumbs

¼ tsp pepper

2 tsp parsley

½ tsp thyme

1 fresh lemon, quartered


Directions:

  • Preheat oven to 400 degrees F.

  • Place the butter, garlic, and wine (if used) in an oven proof baking dish. Microwave on high for 30 seconds to 1 minute until butter is just melted.

  • Rinse scallops well under cold water (fresh scallops); partially thaw frozen scallops if you use these. Arrange scallops in the dish of melted butter.

  • In a small bowl, mix together the breadcrumbs, pepper, parsley, and thyme. Sprinkle mixture evenly over scallops.

  • Squeeze the juice of one lemon quarter evenly over the scallops.

  • Bake at 400 degrees F for 18-20 minutes.
