Who Doesn't Love Cheesecake?

We make cheesecake twice a year (minimum) - it's a tradition in our house to have cheesecake on New Year's Eve. This recipe came from my wife’s best friend Judi over 35 years ago. It has produced spectacular results every time.


Cheesecake


Ingredients:


3 8-ounce packages cream cheese

¾ cup sugar

1 Tablespoon + 1 ½ teaspoons vanilla

½ cup milk

4 eggs

Dash of salt


Directions:

1. Cream the cheese and sugar in a medium bowl.

2. Add remaining ingredients, blending well after each addition.

3. Pour into a graham-cracker crust lined spring-form pan

4. Bake at 475 degrees for 12 minutes (set a timer).

5. Lower oven temperature to 325 degrees and bake for an additional 12 minutes

6. Turn off the oven. Open oven door.

7. Allow to cool with oven door open.


Crust:

1 box of Nabisco Graham Crackers, sugar, and butter (basically just follow the recipe for the crust on the box of crackers)


Notes:

  • I use Truvia sweetener in place of processed sugar.

  • Instead of whole milk I use non-fat (skim) milk.

  • To change things up a bit, I use chocolate graham crackers instead of the original.
