Steak and Salsa Salad

We enjoyed this hearty main dish salad so much that it's become a family favorite. Quick and easy, you can grill up the steak and put this together without the use of a stove for a simple summer supper. The original recipe was found in the Woman's World periodical but I changed it up a bit to reflect our dietary needs.

STEAK AND SALSA SALAD
1 Teaspoon chili powder
1 lb. boneless sirloin steak, sliced 3/4'” thick
½ a head of iceberg lettuce quartered
1 cup fresh salsa + additional
1 avocado, pitted, peeled, chunked
½ cup sour cream
Lime wedges (optional)
Coat 12” nonstick skillet with cooking spray; heat over medium heat. While skillet heats, use the chili powder as a rub over both sides of the steak.
Add the steak to skillet; cook, flipping once, about 4 minutes per side for medium-rare or until desired doneness. Transfer steak to a cutting board and slice thinly.
Arrange lettuce on plates. Then arrange steak strips on the lettuce. Top with salsa and avocado chunks. Dollop with sour cream.
If desired, serve salad with lime wedges for squeezing over steak; place any additional salsa on the side.
Serves: 4 Total time: about 20 minutes
