Scalloped Potatoes (Better Than Mom’s)
Scalloped potatoes are high on the list of comfort foods. Easy to make, they are a delicious accompaniment to any meal. Great too when you just want a snack that's nutritious. The original version of this recipe belongs to Chef Nick Stellino but I added some things from our moms’ vintage recipes and subtracted a few other things that wouldn’t fit into our dietary restrictions.
Ingredients:
6 ounces Parmesan cheese, grated
6 ounces Swiss or gruyere cheese, grated
Ground pepper to taste
Garlic powder to taste
2 cups half and half (you could also use fat free milk)
1 Tablespoon softened unsalted butter
3 large baking potatoes, peeled and slice ¼ inch thick
You’ll need a 9 ½ x 9 ½ x 1 ½ nonstick baking dish
Instructions:
1. Preheat oven to 350˚F.
2. Line baking dish with parchment paper or aluminum foil.
3. Spread the softened butter over the bottom of the dish..
4. Layer the potato slices on top of the butter covering the bottom of the dish.
5. Sprinkle the potatoes with one third of the Parmesan and one third of the Swiss cheeses. Season with a pinch of ground pepper and garlic powder.
6. Repeat potato, cheese, garlic and pepper layering twice more.
7. Add the half and half, pouring evenly over potatoes and cheese until the liquid is three quarters of the way up the sides of the pan.
8. Bake uncovered for 45 minutes (approximately). Then increase oven heat to 400˚ and bake until potatoes are fork tender with a golden brown crust.
9. Remove from oven .
10. Allow to sit for about 15 minutes before cutting.
Serve with your favorite cut of steak, pork, or chicken. Also one portion makes a nice lunch side dish when served with a small salad.
