Pasta Fagioli from the Crockpot

Love me some Pasta Fagioli. Found a recipe for the crockpot and adapted it to our tastes. Came out great! This recipe makes about 8 servings so we cut it in half and had enough for generous (double) servings for 2 days with enough to freeze for another day.


Pasta Fagioli from the Crockpot


Ingredients: 2 lbs ground beef 1 onion (chopped) 3 carrots (chopped) 2 28-oz cans diced tomatoes (undrained) Note: I used crushed tomatoes 2 16-oz can kidney beans (drained) 30 ounces beef stock Note: I used unsalted. Add more if you like your pasta fagioli more soup-like 3 teaspoons oregano 2 teaspoons pepper 5 teaspoons parsley ¼ teaspoon red pepper flakes (optional) 12 ounces spaghetti sauce (I used home made) 8 ounces pasta (ditalini preferred)


Directions:

Brown the beef in a skillet. Drain fat from beef and add to crock pot with everything except the pasta. Cook on low 7-8 hours or high 4-5 hours. Add the pasta the last 30 minutes

Serve with a crisp green salad and some garlic bread.

This recipe makes about 8 servings. We cut the recipe in half and had enough for two people for days – generous servings.
