Light and Easy Fruity Dessert

Sometimes the simplest and easiest dishes are the best. Sometimes you don't have a lot of ingredients on hand. Sometimes you just don't feel like going to a lot of bother. But your family likes dessert and so do you. Here's a quick dessert that you can put together while cutting the sugar.


Fruitful Pound Cake


Ingredients


1 loaf size pound cake (I used the Entenmann's Yellow Pound Cake)

2 cups assorted fruit (I used sliced mango, sliced banana, blackberries)

1 container of whipped topping (I used the Land o' Lakes sugar free)


For an individual serving:


  1. 2 slices of pound cake (not to thick, please)

  2. Atop the bottom slice place a layer of fruit

  3. Place second slice of pound cake

  4. Top with more fruit and whipped topping

Serve with a flair!


NOTES: This is a great way to use up those small amounts of fruit that aren't enough for an entire recipe. My wife especially likes Dragon Fruit (sometimes called passion fruit) as well as pineapple rings. All types of berries (blackberries, blueberries, strawberries, raspberries) bring lots of color to this dessert.


Any pound cake will work here. But watch the sugar content of pre-made cakes. If you have the time or inclination, a home made pound cake works wonderfully.


In extremely hot weather, a small scoop of ice cream (watch the sugar content!) really adds panache.
