This one is a staple in the Delicious Dishes kitchen and it is versatile – meaning you can change up the ingredients to reflect your personal tastes or whatever your pantry holds. This FRIDAY PASTA SPECIAL closely resembles a pasta primavera dish but with some changes/additions.
This recipe is a great way to use up those leftover vegetables and proteins that are in your refrigerator.
FRIDAY PASTA SPECIAL (recipe)
1 lb dry macaroni (any size or shape will work)
Bring your pot of water to a boil and add the macaroni. Cook till al dente. Drain, and set aside.
While the pasta is cooking:
To a large sauté pan, add the following:
Enough olive or canola oil to coat the pan
1-2 cloves thinly sliced garlic
1 small onion thinly sliced
8 ounces of thinly sliced mushrooms
1 cup yellow squash, cut into small chunks
a pinch of dried parsley
crushed black pepper to taste
a pinch of red pepper flakes
1 6-oz can of water-packed tuna, drained well
Sauté all the ingredients until the onion is opaque and the mushrooms fully cooked. Add the cooked pasta to the pan and sauté for additional 1-2 minutes until the pasta is fully mixed with the vegetables.
Add 1/4 to 1/2 cup of pasta water if the mixture is too dry.
Spoon into bowls and top with freshly grated parmesan cheese. A green salad pairs well with this. And a nice dry or semi-dry white wine adds the right touch. Enjoy!

Chef's Notes:
You can change it up by varying the vegetables. Frozen vegetables work well in this dish, just remember to thaw them before use. Peppers (red or green), broccoli, cauliflower, carrots (in bite sized pieces), peas, all are excellent choices.
In place of the tuna, you can use crabmeat or tiny salad shrimp (these come in cans as well.) Be sure they are drained well if you use these. Another option is to add shredded, cooked chicken.
My wife bought me a wonderful kitchen tool set called the Garlic Peeler and Slicer. Makes paper thin slices of garlic without a lot of effort. Simply place the garlic into the slicer and turn it. The Peeler and Slicer are products of the Pampered Chef line.
