Don's Apple Pie

Both my wife, Marion, and I enjoy a home baked apple pie. It is an all-American classic and can be found on any holiday table this time of year. This recipe was passed down to us by my mother-in-law and I like to think I've improved upon it. :)


DON'S APPLE PIE


Filling:

  • 3 or 4 large apples (use your favorite kind of apple - I've used Granny Smith, Red Delicious, Gala, and they've all had a slightly different flavor to the filling

  • 1 packet or 2 teaspoons Truvia (stevia sweetener)

  • Cinnamon (Madagascar Cinnamon is the best if you can find it but any cinnamon will work here)

Directions:

  1. Peel and slice your apples thinly - using a slicer works well here

  2. Using a 1 to 2 inch pie plate, line the plate with a sheet of pie crust, tucking it into the well at the base of the dish.

  3. Place a layer of apple slices, then sprinkle with cinnamon. Repeat until you've used all the apples.

  4. Gently lay another sheet of pie crust over the top of the apple filling and crimp the edges.

  5. Using a sharp knife, cut slits into the pie crust to allow steam to escape during baking.

  6. Sprinkle the top of the pie with the Truvia sweetener and a pinch of cinnamon.

  7. Bake in a 350 degree oven for about 35-40 minutes or until golden brown.

  8. Remove from oven and allow pie to cool for at least 30 minutes before serving.

CHEF'S NOTES:

  • I normally use Pillsbury ready-made pie crusts but you can make your own or use whatever pie crust you normally use.

  • Based on my mood, I will further sweeten the pie filling by adding a drizzle of raw honey just before placing the upper crust over the filling


SERVING SUGGESTIONS:

  • May be served with a scoop of your favorite ice cream or whipped topping (recommend Land O'Lakes fat free whipped topping).

  • Can also be eaten as is - simply delicious.
