Although it's still August and most of us are simply trying to bear up under the heat, this recipe is a winner for all seasons. One pot cooking in your slow cooker keeps the kitchen heat down during the summer months. And as the days start to wane, this is a perfect dish to warm your tummy.
This is an original recipe that I concocted when we had no idea what we wanted for supper. It's easy to make and satisfying. Hope you like it.
BRATWURST MASH-UP
Ingredients
1 Tablespoon olive oil
1 pound bratwurst
1 cup of fresh pepper strips
½ cup of fresh mushrooms (sliced or chunked)
1 medium onion (sliced)
1 8 ounce can of baby potatoes (sliced)
1-3 cloves of sliced garlic (depends on your taste)
¼ cup apple cider vinegar
½ cup chicken stock (no salt added)
¼ cup of flour

Directions
Place all ingredients into your crock pot or slow cooker. Set the pot to LOW and allow to cook for 5 to 6 hours.
When ready, serve over rice or pasta or noodles. Garnish with grated Parmesan cheese.
Also works well served atop a warm grinder roll.
Makes about 4 servings.
