Salt Free French Onion Soup

Some days are just meant for a bowl of hot soup. I used a basic crock pot recipe and changed it up a bit. Here’s what I did.
SALT FREE FRENCH ONION SOUP
4-5 Large Sweet Onions – sliced and cut into half moons
about ½ cup of unsalted butter
6 medium cloves of garlic – peeled and sliced paper-thin
Add these three ingredients to a large frying pan and saute until the onions become translucent and limp – about 10-12 minutes. Be sure all the onions are coated as this will give them a silky smooth taste.
Transfer onions with the garlic into your crock pot.
Add the following:
32 oz. of Swanson’s low sodium beef broth
1 cup of semi-dry white wine
2-3 bay leaves
medium coarse black pepper to your taste
Mix all the ingredients gently. Cover crock pot and let cook on Low setting for about 6 hours.
To serve:
Fill your soup bowl (microwavable kind please) about 2/3 full.
Add a slice of crusty French bread and top with cheese – you can use gruyere, swiss, or mozzarella.
Microwave the entire bowl until cheese melts. About 60 seconds (might need longer depending on your microwave oven).
Serve directly out of microwave oven, topping with grated Parmesan cheese and a bit of black pepper if desired.
This recipe made enough for 8 good-sized bowls of soup. I served it with a cole slaw salad for a side.
