Beet, Potato and Egg Salad
A nice salad for those hot summer days! Simple and easy to prepare. We paired it with a serving of breaded chicken.
Ingredients:
3 hard boiled eggs, sliced
1 large boiled potato, sliced
1 package of Love Beets, sliced
¼ head of lettuce
Dressing:
Mix 1 part honey to 2 parts balsamic vinegar. Combine.
On a dinner-size plate, line the plate with lettuce.
Carefully cover with a layer of beets.
Follow with a layer of potatoes.
Finish with a layer of egg slices.
Drizzle with dressing, leaving remaining dressing on the side.
Note:
You can add slices of avocado as well.
